Lemon Pancakes: Creamy and Light

Dearest Trophy:
Here is a fabulous breakfast or brunch meal that will have your pedicured toes curled.  Serve with pomegranite mimosa's.  enjoy!

Lemon Cottage Cheese Pancakes

3 eggs, separated

1/4 cup all purpose flour

3/4 cup cottage cheese

1/4 cup (1/2 stick) butter, melted

2 Tbs. sugar

1/4 tsp. salt

1 tsp. lemon juice

1/2 Tbs. grated lemon zest

Separate the eggs and beat the whites until they hold stiff peaks.

In another bowl, stir together the egg yolks, flour, cottage cheese, butter, sugar, salt and lemon jest & juice until well blended.

With a large spatula, fold the egg whites into the yolk mixture. Gently stir until well-blended.

Heat a skillet over medium heat. Pour pancake-sized dollops of batter onto skillet and cook slowly for about a minute and a half. Gently flip pancakes and cook until done.

Creates 10-12 cakes, 2 or 3 is an appropriate portion

Trophywife at Work Uniform: Gym looks

Dearest Trophy:
There she was at the gym today, a Trophywife at work.  Doing crunches like her life depended on it.  Her hair at first glance is pulled back with an elastic band.  But it's not so simple, it's a chic high ponytail with a few strands pulled out and wrapped around the band to hide the elastic.  The same hairstyle would look just as good with a little black dress and a pair of Gucci Ursula ankle strap on stilettos sandals as it does with her pink Nike air max tennis shoes.

I can not say for sure but I believe trophy was also wearing tinted moisturizer. Her skin looked flawless.

And of course her gym clothes were not merely a baggy t-shirt and sweatpants- nope not on Trophy.  She wore bright Zella capris and matching racerback tank & hooded jacket that would look just as good for running errands or grabbing lunch with the girls.

Going Trophy in the morning is easier for me when I wake early, have my spiritual time, focus on some abdominal work or yoga.  And when the weather permits in the STL this may also include a walk with Bella (the Trophy pooch).  What a trophy can't forget to do is take care of the beauty.  It's a choice even at the gym - whether to go trophy wife or look like some of the other non-trophy's at the gym. (you know the difference)

It does not mean you have to go full Zsa Zsa to walk out the door or before kissing Mr. Tophy as you serve up small talk over breakfast. But I do believe it's why God created tinted moisturizer and hairbrushes. There was a time I didn't take the time (and admit to forgetting this grooming rule from time to time) and I received a differn't reception on those occasions. Nothing over the top mind you, but it is not a myth that one get's treated better when you let the pretty out. And yes personality can be pretty too - but that's not our focus.  Remember living Trophy is "living extra" to create the life you love, so that means doing extra.
